Healthy Whole Grain Cookies for the Whole Family

Finding a healthy and tasty snack, that would fit everyone’s preferences, is a very hard task, at least in my home. Both my husband and my daughter are chocolate freaks, but I’m more into some healthier alternatives. Most dessert recipes nowadays contain lots of sugar, which makes them delicious, but full of calories, which is not good for us. Once you have kids, you start to think twice what you eat and what you give your loved ones. Nowadays we have such a wide variety of ingredients that it’s not so difficult to come up with something that will have a high nutritional value, and won’t leave a bad aftertaste in your mouth. Here is a simple recipe for whole-grain cookies that fits into the description.

Whole grain cookies

Ingredients:

    • 1 cup of whole grain flour (whole wheat will also work)
    • 1 ½ cup of oat flakes
    • ½ cup of sunflower seeds
    • ½ cup of linseed (crushed)
    • ½ cup of raisins (only if you like them)
    • 50gr of shredded coconut flakes
    • 3-4 tbsps. of strawberry jam
    • 2 tbsps. of brown sugar
    • A pinch of salt
    • 1 tbsp. of baking soda
    • 2/3 cup of olive oil
    • 1 tbsp. of vinegar
    • 1 ½ – 2 cups of water (add 1½ cups first, then add a little more if you have to)

How to Prepare Them:

In a deep bowl, sift the flour with the brown sugar, the soda and the pinch of salt. Stir everything together. Add the seeds, the shredded coconut flakes, the raisins and the oat flakes, and stir again until everything mixes properly.

In a separate bowl, mix the water, the olive oil and the strawberry jam. The olive oil might make it a little difficult to mix them all together, but if you use a mixer, you will save yourself a lot of stirring. Now it’s time to mix the solid and liquid parts. Start by gradually adding the liquid to the solids and use your hands to prepare a hard dough. If you want, you can also add some cinnamon, a little sesame or poppy seeds or even pumpkin seeds.

Once the dough is ready, use your hands to shape walnut-sized balls from it. Since the dough can be sticky, use some water to wet your hands a little before each cookie. Each dough ball must be flattened a little and arranged on a tray covered with some baking paper.

Bake the cookies for around 7-8 minutes in an oven heated to 180°C, then lower the temperature to 120°C and bake for 20 more minutes, or until they are ready. Be very careful not to burn them the first time you try the recipe, because different ovens bake differently. And, of course, enjoy!
